Pooka's Thai Vegetable Soup Recipe

Serving Size  : 4    

  2        tablespoons  olive oil
  1        onion -- finely chopped
  2        cups  mushroom -- trim off bottom of stems and slice
  1        quart  vegetable stock
  1        14 oz can  coconut milk
  1        cup  broccoli florets
  1        cup  snow pea pod, fresh -- cut diagonally
  1        stalk  celery -- cut diagonally
  5        green onion -- cut diagonally
  1        cup  bean sprouts
  1        tablespoon  fresh ginger root -- minced
  2        tablespoons  lime juice -- freshly squeezed
  1        teaspoon  Chinese Chili Garlic Sauce
  1/4     teaspoon  salt
  1/2     cup  cilantro -- minced

Warm oil in a large saucepan over medium heat

Add onion, stirring frequently until softened, about 10 minutes

Add garlic mushrooms, celery and broccoli and saute for 5 minutes

Stir in broth and coconut milk, chili garlic paste and ginger, bring to a simmer

Reduce heat to medium, add cup  broccoli florets, snow peas, celery, green onion, bean sprouts, cook another 2-3 min.

Stir in lime juice and salt

Ladle soup into bowls, garnish with cilantro, and serve Simple delicious
soup.
