Makes 9 cups
3 cups brown or white rice flour
3 cups corn, potato, or tapioca starch
2 cups chana (chickpea), Sorghum or soy or flour
1 cups corn flour or masa harina
2 1/2 tsp. xanthan gum
Combine all the ingredients in a large bowl and mix thoroughly, until you have one homogeneous bowl of flour. Transfer the flour air tight container
