Sautéed Kale with Leeks

  1         tablespoon  olive oil
  4         cups  kale -- chopped (tough center rib removed)
  2         leeks -- thinly sliced (white and  light green parts only)
  1/8      cup  rice vinegar
  2         tsp  soy sauce, low sodium -- gluten free
             Fresh cracked pepper to taste

In a large skillet, sauté leaks in olive oil, stirring, over medium heat
for 1 minute.

Add the kale and raise the heat to medium high.

Add the soy sauce and vinegar, and stir-fry until the kale is wilted but
still slightly crunchy, about 3 minutes, season to taste with pepper.
