Korean Sesame Spinach (Sigumchi Namul)

"A delicious Korean side dish"
Serves 6

  2        tablespoons  olive oil
  2        teaspoons  sesame seeds
  1        medium  onion
  3        cloves  garlic -- minced
2        pounds  spinach -- stems removed
4        teaspoons  low sodium soy sauce -- gluten free
  1        tablespoon  lemon juice
  2        teaspoons  sesame oil
  1/4     teaspoon  ground pepper

Heat the oil in a large saucepan over medium heat, add the sesame seeds and stir fry for about 30 seconds, or until lightly browned then add the onions and minced garlic and stir fry until lightly brown.

Add the spinach in batches, stirring each addition until it wilts before adding the next. When all the spinach has cooked down, remove it from heat

Whisk remaining ingredients together in a small bowl and add to spinach tossing until mixed; adjust seasoning and serve.
