Creamy Rice Pudding


















To give this recipe the Scandinavian touch use almond extract instead of vanilla.
serves 4

3 cups milk
1 cup cooked rice
2 eggs
1/3 cup sugar
2 teaspoon almond or vanilla extract

In a medium saucepan, whisk egg and sugar into milk. Add rice and cook over medium heat, stirring constantly until thickened. Pour into 4 bowls and place plastic wrap on the surface of pudding to avoid forming a milk scum. To serve, top with fruit sauce or jam.
