Ham and Cheese Crustless Quiche


 















Ham and Cheese Crustless Quiche
 

8 eggs
1 cup Balkin or Greek yogurt
1 cup shredded gruyere  cheese or cheddar (depending on your taste)
1/4 cup grated Parmesan cheese
1/2 cup chopped ham
2 cloves garlic, minced
1 tsp fresh thyme leaves (or 1/3 tsp dried thyme)
1/8 tsp freshly ground pepper
2 Tb butter, for greasing pie plates

Generously grease two

Sprinkle ham and cheese on the bottom of the pan(s) Combine all other ingredients in medium bowl and use a fork to whip it all together.  Pour egg mixture into evenly over the ham and cheese.  Bake at 325 degrees for 25-30 minutes for 2 pie plates or 50-60 min. for the 9x13” baking dish, until the center of the quiche is set and the edges are slightly browned.  Cool slightly, and serve!

Have you ever had the magic chocolate shell that hardens when you put it on ice cream (and also has 27 mysteriously unpronounceable ingredients)? It is so yummy and is NOT something I think of when I think of “real food.”





















When I was browsing on Pinterest one day I came across a magic shell recipe made with 2 ingredients: chocolate chips and coconut oil. Yes, please! I made it for a birthday celebration using my favorite brand of real ice cream. Well, actually I didn’t use the ice cream to make it, but it served as an absolutely delicious chocolate topping for a scoop of vanilla. Whether you’re a chocoholic (like me) and you want to drown your ice cream in your homemade magic shell…Or maybe you’d just prefer a drizzling?

 Either way, it comes together in just minutes so that you can be digging into it in no time flat. It was a big hit here and couldn’t be easier to make! I’m thinking chocolate covered strawberries are next


Magic Chocolate Shell {make it yourself}
Ingredients
  • 1 heaping portion of chocolate chips (2 tablespoons)
  • 1 portion coconut oil (1 tablespoon)

Instructions
  1. You can use the stove top or the microwave to make these.
  2. To heat them on the stove, fill a pan with water and sit a bowl into the water bath. Put the chips and oil into the bowl and cook over medium until melted, stirring frequently.
  3. Or, use the microwave by melting the chips and coconut oil in a bowl at 50% power, stirring every 15-30 seconds until they are completely melted. original recipe from Skip to My Lou

it'll be an adventure that's for sure. But so beautiful. no TV or internet for awhile until we get the satellite dishes up and running.

Basic Medium Gluten Free White Sauce (medium GF Béchamel Sauce)

Basic Medium Gluten Free White Sauce (medium GF Béchamel Sauce)
"This recipe make 4 cups medium thick sauce good for casseroles and sauces"

Recipe By     :Ellen M. Ennis Davis
Serving Size  : 16   Yields: 4 cups
Cuisine:    : Sauces and Dips

  4       Cups  Milk -- (or cream)
  8       Tablespoons  Rice Flour -- (or cornstarch)
  8      
Tablespoons  Butter -- (or olive oil)
          Salt and Pepper to taste

In a saucepan, scald milk over low heat (heat until small bubbles start to form around the edges of the pot. Set milk aside until needed.

Over medium low heat melt the butter in a pan, then stir in the flour
continue to stir until fat is absorbed into flour. Gradually stir in warm milk, a little at a time, and bring to a boil, stirring constantly.

Add season to taste and simmer over medium heat, stirring constantly, for 8-10 minutes.

NOTES : Please note that the sauce will get thicker when it cools
so take it off the heat just a little before the thickness you desire
Ratios for the three basic Thicknesses of White Sauce

        Milk             1 cup      1 cup         1 cup
        (or cream)
        Gf flour        1 tbls      2 tbls         3 tbls
        (or cornstarch)
        Butter           1 tbls      2 tbls         3 tbls
        (or olive oil)
        Salt and Pepper to taste
      
NOTES :Please note that the sauce will get thicker when it cools
so take it off the heat just a little before the thickness you desire If a thinner sauce is required, add more milk.If the Béchamel needs to be thicker, simmer the sauce longer.

Chocolate Chickpea Spread
1 15-Ounce Can Chickpeas
1 Tablespoon Peanut Butter
3 Tablespoons Olive Oil
1/2 Cup Dutch-Processed Cocoa Powder
1/2 Cup Granulated Sugar
1 Teaspoon Instant Coffee Powder
1 Teaspoon Vanilla Extract
1/2 Teaspoon Salt
2 – 4 Tablespoons Water
As with all hummus, this spread couldn’t be easier; Just throw everything but the water into your food processor or blender, and thoroughly puree, scraping down the sides of the bowl to get everything incorporated as needed. With the motor running, slowly drizzle in the water, until you reach your desired consistency. Spread at will!
Makes about 2 Cups
