Lemonade Cloud


This dessert can also be made with 2 whole eggs instead of 2 egg yolks but the colour will be very pale. Butter can be omitted for to make it fat free.
Serves 6

1 (12 ounce) can frozen lemonade concentrate
6 tablespoons cornstarch
1/4 teaspoons salt
2 cups water
3 egg yolks
2 tablespoons butter
1 cup 0% fat natural plain yogurt

Lemonade curd

In a bowl with a mix master or a blender add all ingredients.
Beat or whiz until well blended.
Add mixture to a medium saucepan on medium heat, bring to a boil stirring. As the mixture thicken, turn temperature down to a simmer and continue to stir until for 1 minute. Let cool completely with plastic wrap on surface to avoid forming a scum.

Putting it together
Reserve 6 teaspoons of lemon sauce for garnish
Mix cooled lemon sauce with the yogurt and whip with mix master or whisk.
Divide mixture into 6 dessert bowls and top each with 1 teaspoon of  Lemonade curd.
