Skillet Beef Stroganoff



"A tasty and quick supper just add a vegetable on the side for a hearty meal."
Recipe By  :Ellen M. Ennis Davis
Serves        : 6   


  1        pound  ground beef
  2        medium  onions -- chopped
  2        cups  mushrooms -- sliced
  3        tablespoons  cornstarch
  4        cups  beef stock
  1/4     teaspoon  ground pepper
  1        cup  spinach -- rough chopped
  1        cup  sour cream
  4        tablespoons  pimientos -- diced
           salt to taste

In a skillet brown ground beef, onions and mushrooms.
 

Stir in cornstarch and add beef stock, stir; let simmer until your mixture
is thickened, add spinach and stir.

Serve over noodles or rice. Garnish with pimento and serve with sour
cream.
