Croatian Pork Chops in Mushroom Sauce



This is a delicious recipe inspired from a North Croatian recipe. The taste is much enhanced by the addition of wild mushrooms but a mix of specialty mushrooms from you grocer will work admirably. You can even use rehydrated dry mushrooms if you like.
Serves 4

4 1” pork chops
2 cups mushrooms (white button)
2 cups mushrooms (any other flavourful)
1/2 cup brown rice flour
3 tablespoons butter
1/4 cup olive oil
2 tablespoons corn starch
2 cups stock
1 onion chopped
1/4 cup white wine vinegar
1/2 teaspoon dry thyme
1 tablespoon pepper
2 teaspoon gf Worcestershire sauce
1/2 teaspoon salt
1 teaspoon grainy mustard
1 cup sour cream
3 tablespoons fresh parsley leaves (minced)

Preheat Oven to 350°F

Season both sides of pork chops with salt pepper and Worcestershire sauce, pour oil over seasoned pork. Leave them to soak in oil for 60 minutes. Turning once at thirty minutes

Drain off olive oil and dredge pork chops in flour and then brown both side in skillet on medium heat. Put chops in a baking dish.

Sauté mushrooms in butter until starting to brown. Season with salt pepper and thyme and onions continue to cook until onions are tender.

Add corn starch, and stir to coat mushrooms, stir in stock and mustard.

When sauce starts to thicken stir in sour cream and parsley, pour over pork chops.

Bake uncovered in the oven for 45 minutes.
Serve with mashed potatoes and either green peas or beans.
