Stewed Beef, Dominican style, Carne de Res Guisada


Country: Dominican Republic
serves 4

2 pounds beef, cubed 2”
1/4 cup of olive oil
2 tbsp of tomato paste
1/4 cup lime juice (or sour orange juice)
1/4 cup chopped cilantro

3-4 cups hot water.

For seasoning:
2 tablespoons gf soy sauce
2 rib celery, minced
1 tablespoon chicken stock granules
1 medium green pepper minced
1 medium roasted red pepper minced
1 medium onion, minced
1 teaspoon cinnamon
1 teaspoon pepper
2 teaspoons garlic paste or 4 cloves of garlic mashed
3 tablespoons of lemon juice
1 teaspoon turmeric
1 teaspoon oregano


1. Combine seasonings and mix with beef, let sit for 30 minutes

2. Brown meat in a skillet with hot olive oil.

3. add the marinade that is left, cover the pot, and leave to cook over medium heat, checking constantly to add little amount of hot water so that the meat won’t dry out. Cook until meat is tender approx. 1 hour.

4. When meat gets tender, Sauté with two spoons of tomato paste, lemon juice then add 1cups warm water, more if you like a thinner sauce, season with salt.

6. When the sauce reaches the consistency desired, add cilantro, turn off the heat and serve.
