Cocadas (Coconut cupcakes)



Country: Dominica

Very easy and make a pretty presentation. These melt in you mouth coconut treats have just a hint of citrus to compliment this tropical delight.




2 cups unsweetened coconut, grated
1 cup Demerara sugar, lightly packed
1 1/2 cups butter
2 eggs
Juice of 1 lime (juice of sour orange if available)
1 cups of corn starch flour
1 teaspoon of baking powder
Zest of 1 lime (zest of 1 sour orange if available)
1/4 teaspoon salt

Pre-heat oven at 400 °F
1.     Sift flour, salt and baking powder together. Mix together with coconut and lime zest. Put aside.
2.     With electric mixer or whisk beat together lime juice, sugar and butter and whip until it turns a light color. Add eggs one by one, waiting until the previous one is thoroughly mixed before adding the next.
3.     Add flour, coconut mixture and continue until well mixed.
4.     Line muffin cups with paper muffin liners. Pour two spoonfuls of the batter in each muffin cup (you can use a piping bag if you like)
5.     Bake until they turn golden brown on top. Serve at room temperature.
