Corn Meal Cakes Arepitas de Maiz


Country: Dominican Republic
serves 4 
1 cup corn flour
1/4 teaspoons of milk
1 teaspoon of sugar
1 teaspoon baking powder
1/2 teaspoon of salt
2 egg
2 tablespoons olive oil

Mix dry ingredients together. Combine milk and egg and beat lightly. Mix gradually int dry ingredients. Add more liquid if the mix is not moist enough. 

Heat oil in a skillet.Drop about a tablespoon full into the skillet. Fry until golden on both sides. Serve them up when they are fresh and hot.
