Gluten Free Meatloaf Recipe

"This recipe uses mashed potatoes in place of bread crumbs."

  4           Potato -- cut up
  2           eggs
  1           teaspoon  salt
  1 1/2     pounds ground beef, lean
  1           onion -- finely chopped
  3           cloves  garlic -- minced
  1/2        teaspoon  pepper
  1           cup  fresh parsley -- chopped
  1/4        cup  Parmesan cheese
  1           teaspoon  paprika
  2           teaspoons  chili powder
  2           teaspoons  red pepper flakes

preheat oven to 350°F

In a large pot, cook potatoes until tender, drain and rinse potatoes under
cold water to cool them down. Mash potatoes Add parsley, salt, and eggs.

Mix ground beef,onion, garlic, and pepper in bowl. Combine with mashed
potatoes and pack into a 9 x 5" loaf pan.

Bake at 350°F. for 40 minutes.

Remove from oven and let rest for 15 min.
