Oven Baked Curried Chicken

Inspired by a wonderful quick recipe from Canadian Living “Oven Baked Curried Chicken” Canadian Living "Oven-Baked Curried Chicken"
I just adjusted ingredients to what I had available in my pantry.
Serves 4
Country: Canada (with international inspiration)

2 medium onions, chopped
1 tablespoon(s) vegetable oil
1/3 cup plain yogurt
3 tablespoon(s) sugar
2 tablespoon(s) curry powder
3 tablespoons tomato paste
3 cloves garlic minced
2 tablespoon(s) gf soy sauce
2 teaspoons hot sauce
2 teaspoon(s) Dijon mustard
2 tablespoons lime juice
1/4 teaspoon(s) pepper
8 chicken parts (4 boneless breasts)

Preheat oven to 375°F
In a skillet add oil and sauté onions on medium heat until soft, add curry powder and cook stirring for 3 minutes, stirring so it does not burn. Whisk in yogurt, sugar and all of the remainder of the ingredients except the chicken. Add chicken and turn to coat.

Bake in 13 x 9” baking dish at 375°F oven until chicken is no longer pink inside, 45 minutes (30 minutes if boneless).
