Cuban Black Beans and Yellow Rice


Serves 4-6

1 tablespoon olive oil
1 cup gf ham, diced
1 cup chopped onion
2 cloves garlic, minced
1 cup uncooked brown rice
1 teaspoon salt
1/4 teaspoon ground turmeric
1/8 teaspoon ground red pepper flakes
2 cups water
1 medium fresh tomato, chopped
1/2 cup chopped green pepper
1 can black beans, drained

Edit Directions sectionSauté onions in olive oil until translucent, add garlic; cook over medium until garlic is cooked.
Stir in rice, salt, turmeric, red pepper , stir until completely mixed then add water.
Bring to a boil; reduce heat, cover, and simmer 10 minutes.
Add beans, tomato, pepper and ham; cover and let cook on low for another 10 minutes. Let sit with lid off for 5 minutes
Fluff and serve.
