South African Yellow Rice

Serves 6
Aromatic and beautifully coloured, yellow rice is essential with bobotie.

1 1/2 cup rice
3  cups water
1 teaspoon salt
2 teaspoons turmeric
2 teaspoons cinnamon
1/2 cup seedless raisins or currants
1 tablespoon butter
2 tablespoons  brown sugar

In a saucepan with a tight lid add water, salt, raisins, cinnamon, turmeric, and then the rice and bring to a boil, cover and simmer on low for 20 minutes
Remove from heat and add butter and sugar.
Serve warm.
