Maple Raisin Rice Pudding

This delicious dessert is delicious made with real maple syrup but it is an extravagance, you can use 1/4 cup brown sugar to replace the syrup and add 1/4 more milk;  then maple flavouring after removing from the heat
serves 4

2 cups milk
3/4 cups evaporated milk
1 cup cooked rice
2 eggs
1/4 cup real maple syrup
1 pinch of salt
1/2 cup raisins

In a medium saucepan, combine milk and evaporated milk, whisk eggs and syrup into milk. Add rice and cook over medium heat, stirring constantly until thickened. Take of the heat and add raisins. Pour into 4 bowls and place plastic wrap on the surface of pudding to avoid forming a milk scum.
