Back to dedicated meal planning for a Spell

My Sweetie will be off work for awhile. He had a knee replacement on the 22nd and with the surgery and change in activity his type 2 diabetes balance has been disrupted. The health care team put him on insulin (scaring the crap out of both of us) The Doctor kept him in the hospital a few days longer than usual to do some extra testing and get the diabetes team in to see us. 

Ok; long after surgery reading the first day post surgery sugars 16, then constantly since between 9 and 11. The Glycohemoglobin (HbA1c, A1c) blood test (show average blood sugar over 3 months) showed 8, so it's not a critical rise but with the need for a good level needed for heeling we have to get into a concerted diet regime in place until he has recovered and back to his regular activity. 


And of course as not to make him feel special I got a call that my  Glycohemoglobin (HbA1c, A1c) showed I need to get back on a healthier routine. I'm only 6.5 but being a Prediabectic it is a warning to get my act back in line. So here goes Gluten Free Diabetic Friendly recipes on the road again.

Meatless Monday we are having Korean Rice Bowl- Bibimbap 비빔밥

Bibimbap 비빔밥 Korean Vegetables and Rice


Bibimbap 비빔밥 Korean Vegetables and Rice, Bibimbap in Korean is pronounced pibimp͈ap,  a signature Korean dish. The word means "mixed rice". Bibimbap is served as a bowl of warm rice topped with namul (seasoned vegetable side dishes) and gochujang (chili pepper paste). A raw or fried egg and sliced meat or tofu (usually beef) are common additions. The ingredients are stirred together thoroughly just before eating. It can be served either cold or hot. It is a great way to use up leftovers.

I served them over a wonderful nutty short grained Californian brown rice (a gift from my sister) and added some pickled ginger and shreds of green onions.

Sunday Dinner

Tonight I made a wonderful Family Turkey Dinner
We had Roast Turkey from Frozen and gravy with steamed carrots and broccoli, cranberry jelly and mashed potatoes with watercress and green onions. Here's to turkey sandwiches and wonderful leftovers for tomorrow and maybe the next day. I love Leftovers.


A Healthier Rework of the Traditional Caesar

As each of us creep into the second half of a century on this planet a lot of us are becoming plagued with diet related health problems; our family has been dubbed with, even a few some of the young ones even have food allergies. One of the traditions in our family dinners has always been a good garlicky Caesar Salad. But alas Milk allergies, diabetes, low sodium and low fat diets have started restricting the ingredients in our beloved salad. So playing with the ingredients and doing a little digging I came up with this variation for my Nephew Birthday. I'm afraid the result was a little overpowering with the garlic but I have adjusted the amounts and to bring it back into the range of the general public. Please enjoy. This salad is Corn Free, Dairy Free, Diabetic Friendly, Egg free, Gluten Free, Heart Healthy, Low Carb,  Low fat, Low sodium, Vegan, Vegetarian

Note: Working with low fat recipes you must adjust your spices and aromatics, they tend to be much more effective that with the normal levels of fats and oils.

Woot Woot I'm back on Google


Rah Rah, I can get access to my Blogger again. Trouble when we changed from DSL to satellite my couldn't get on to my Google account accept from a computer which was on my old providers DSL. We've worked our way around it and I'm back. Mwahahaha.
We've now got a kitchen, a new well, an new septic sytem, bathtub, shower, washing machine.

it'll be an adventure that's for sure. But so beautiful. no TV or internet for awhile until we get the satellite dishes up and running.

A Break for the Summer
















You have probably noticed there have been very few postings for awhile.
I'm afraid the spring and summer turn my life topsey turvey so; I usually fall back on my old favourites. I'll be mostly using recipes already posted or cooking out at camp where there is no electricity, so with only the scattered entries over the summer I must bid you adieu until September. Please feel free to peruse the recipes previously posted and I will be back in the fall with some new entries.

I wish you Good Eating and some Summer Fun for everyone.

No Barbecue yet in Kakabeka Falls, ON

I so much wanted to barbecue my chicken tonight but the snow has such and ice crust I could not get to the barbecue. So the chicken had to go in the oven.

It may be spring according to the Date, but unfortunately Mother Nature doesn’t have a calendar in my part of the world.

I can see my adirondac  chairs but they might as well be a mile away with the snow drifts.

the snow is starting to melt but it'll be awhile until any flower are brave enough to peek out here.
